1 mausteinen makkara
1 iso punasipuli
2 valkosipulinkynttä
2 herkkusientä
voita ja öljyä paistamiseen
3 dl risottoriisiä
2 dl punaviiniä
2 tuoretta päärynää
6 dl lihalientä
suolaa ja pippuria
parmesaaniraastetta tarjoiluun
1. Kuutioi makkara, punasipuli, valkosipulit ja herkkusienet pieniksi kuutioiksi. Kuullota kasvikset syvällä pannulla voi-öljyseoksessa, kunnes sipulit ovat pehmeitä ja läpikuultavia.
2. Lisää pannulle risottoriisi ja jatka kuullottamista muutama minuutti, kunnes riisi alkaa kiiltää. Kaada pannulle punaviini ja anna sen kiehua, kunnes alkoholi on haihtunut kokonaan.
3. Kun risottopohja on kuivahko, raasta pannulle päärynät. Sekoittele ja lisää lihaliemi pikkuhiljaa, kunnes päärynät ovat pehmeitä. Vähennä lämpöä ja anna risoton kypsyä noin 25 minuuttia, sekoitellen ajoittain. Lisää tarvittaessa vettä ja peitä pannu kannella, jos risotto alkaa kuivua liikaa. Kun riisi on kypsää, siirrä pannu pois liedeltä ja mausta suolalla ja pippurilla.
4. Anna risoton vetäytyä muutama minuutti ennen tarjoilua ja maista tarkistaaksesi maku.
5. Tarjoile risotto runsaalla parmesaaniraasteella ja sopivan punaviinin kera.
