Valmista herkullinen Coq au Riesling kuivalla Riesling-viinillä. Helppo resepti kanankoipista, sienistä ja pekonista. Täydellinen päivällinen 6-8 hengelle!
800 g kanankoipia
voita ja oliiviöljyä paistamiseen
2 sipulia ja valkosipulia
1 paketti pekonia
1 iso tomaatti
250 g portobello sieniä
5 dl rieslingiä
2 dl kuohukermaa
suolaa ja pippuria
1. Ruskista kanankoipia isolla paistinpannulla, jossa on seos voita ja oliiviöljyä. Kun koipien pinta on saanut kauniin värin, siirrä ne sivuun pannulta.
2. Käytä samaa pannua hienonnettujen sipulien, murskatun valkosipulin ja pekonikuutioiden ruskistamiseen. Näin kaikki herkulliset maut jäävät talteen.
3. Kun sipulit ovat pehmenneet ja pekoni on saanut ruskean värin, lisää pannulle kuutioidut tomaatit ja viipaloidut sienet.
4. Anna sienten nesteiden haihtua noin 5 minuuttia, kääntele välillä. Lisää sitten kanankoivet takaisin pannulle.
5. Kaada pannulle runsaasti valkoviiniä, niin että kanankoivet peittyvät nesteeseen. Anna ruoan hautua miedolla lämmöllä poreillen noin 20 minuuttia, kunnes koivet ovat kypsiä.
6. Lisää joukkoon kuohukerma ja anna kastikkeen hautua ilman kantta noin 10 minuuttia, kunnes se on redusoitunut puoleen.
7. Jos haluat kanankoipien pinnan rapeaksi, viimeistele ne kerman kanssa uunissa liedellä hauduttamisen sijaan. Mausta suolalla ja pippurilla.
8. Tarkista ruoan maku ja tarjoile herkullinen Coq au Riesling keitetyn riisin tai pastan kera.
