2 paprikaa
2 varsisellerin vartta
1 sipuli
2 valkosipulinkynttä
1 paketti tempeä tai kiinteää tofua
öljyä paistamiseen
1 rkl tomaattipyreetä
1 tl cayennenpippuria ja paprikajauhetta
2 ½ dl pitkäjyväistä riisiä
6 dl kasvislientä
1 tölkki kuorittuja tomaatteja
suolaa ja mustapippuria
tuoretta korianteria
1. Poista paprikoista siemenet ja leikkaa ne kuutioiksi. Viipaloi sellerit ohuiksi suikaleiksi. Kuori ja hienonna sipuli sekä valkosipulinkynnet. Leikkaa tempe kuutioiksi. Kuullota paprikat, sipulit, sellerit ja tempekuutiot öljyssä muutaman minuutin ajan, sitten lisää pannulle tomaattipyree. Sekoita kevyesti ja mausta cayennepippurilla sekä paprikajauheella.
2. Lisää pannulle riisit ja kuullota muutama minuutti. Kaada pannulle noin 1 dl kasvislientä, jos riisi alkaa tarttua pannuun. Lisää loput kasvisliemestä ja tomaatit, sekoittaen kevyesti. Anna kypsyä miedolla lämmöllä kannen alla noin 20 minuuttia, kunnes neste on melkein kokonaan imeytynyt riisiin ja riisi on kypsää.
3. Mausta jambalaya suolalla ja pippurilla tarpeen mukaan. Tarjoile ruoka suoraan pannulta ja koristele tuoreella korianterilla.
