600 g kotimaista porsaan sisäfilettä
1 rkl oliiviöljyä
suolaa
mustapippuria
Lämmin artisokka-tomaattisalsa
1 purkki artisokansydämiä öljyssä
2 valkosipulinkynttä
1 rkl oliiviöljyä
200 g helmi- tai kirsikkatomaatteja
½ ruukkua basilikaa
2 rkl paahdettuja pinjansiemeniä
suolaa
mustapippuria
pastaa
parmesaania
Ylellinen italialainen pikaruoka herkullisella lämpimällä salsalla.
1. Valmista salsaa varten valuttamalla artisokkasydämet öljystä ja leikkaamalla ne sopivan kokoisiksi paloiksi. Kuori ja hienonna valkosipuli. Halkaise tomaatit. Lämmitä öljy paistinpannulla ja kuullota valkosipuli varovasti, vältä ruskistumista.
2. Lisää pannulle artisokat ja tomaatit, ja paista niitä sekoitellen muutaman minuutin ajan. Lisää pinjansiemenet ja revi joukkoon hieman tuoretta basilikaa, mutta säästä muutama lehti koristeluun. Mausta salsaa suolalla ja pippurilla. Pidä salsaa lämpimänä.
3. Keitä pasta pakkauksen ohjeiden mukaisesti al dente -asteelle.
4. Leikkaa filee noin 2 cm paksuiksi siivuiksi ja nuiji ne ohuiksi lihapihveiksi. Grillaa tai paista lihat noin 2 minuuttia kummaltakin puolelta. Mausta pihvit suolalla ja pippurilla.
Tarjoile lihaleikkeleet salsan ja pastan kanssa. Raasta päälle runsaasti tuoretta parmesaanijuustoa ja koristele basilikan lehdillä.
