FALAFELIT
1 pkt valmiiksi liotettuja kikherneitä
1 tl kuminaa
1 tl korianteria
1 tl ruokasoodaa
3 dl vettä
suolaa
1 paketti kookosrasvaa uppopaistamiseen
HUMMUS
1 tlk valmiiksi liotettuja kikherneitä
½ dl tahinia
1 dl oliiviöljyä
½ dl sitruunanmehua
suolaa
1. Pese ja huuhtele kikherneet huolellisesti. Jauha ne käsin mausteiden kanssa tasaiseksi massaksi.
2. Lisää massaan vesi, ruokasooda ja suolaa. Vaivaa taikina käsin, kunnes se on yhtenäinen.
3. Kuumenna kookosrasva kattilassa. Muotoile taikinasta lihapullan kokoisia pyöryköitä. Testaa öljyn kuumuus heittämällä pieni nokare taikinaa öljyyn. Jos öljy on tarpeeksi kuumaa, pyörykkä nousee nopeasti pintaan.
4. Paista pyöryköitä sopivissa erissä noin 5 minuuttia. Kääntele niitä tarvittaessa, jotta ne paistuvat tasaisesti kaikkialta. Nosta valmiit falafelit reikäkauhalla talouspaperin päälle kuivumaan.
5. Mittaa hummuksen ainekset tehosekoittimeen ja soseuta ne tasaiseksi tahnaksi. Maista hummus ja lisää tarvittaessa suolaa tai sitruunamehua.
