JAUHELIHA-BRUSCITTI:
800 g naudanjauhelihaa
80 g voita
ripaus suolaa ja pippuria
1 tl fenkolinsiemeniä
2 valkosipulinkynttä
2 dl punaviiniä
POLENTA:
2L kanalientä
300 g polentaa
1 tl oliiviöljyä
ripaus suolaa ja pippuria
1. Valmista jauheliha-bruscitti: Ota jauheliha jääkaapista hyvissä ajoin ennen valmistusta, jotta se saavuttaa huoneenlämpötilan. Jauha valkosipulit ja mausteet karkeaksi rouheeksi. Kuullota rouhe laakealla pannulla voissa keskilämmöllä.
2. Vältä valkosipulien palamista ja lisää jauhelihat pannulle, kun sipulit ovat pehmenneet. Ruskista lihaa tasaiseen ruskeaan väriin sekoitellen jatkuvasti. Kaada pannulle punaviini ja anna paistoksen hautua kannen alla vähintään 15 minuuttia.
3. Valmista polenta: Sillä aikaa kun bruscitti hautuu, kiehauta kanaliemi kattilassa. Nosta kattila liedeltä ja sekoita joukkoon polentahiutaleet. Sekoittele hiljalleen noin 5 minuuttia, kunnes hiutaleet ovat turvonneet. Mausta polenta oliiviöljyllä ja haluamillasi mausteilla. Peitä kattila kannella, jotta polenta pysyy lämpimänä.
