1 tl ras el hanout – mausteseosta
1 tl kurkumaa ja savupaprikaa

1 valkosipulinkynsi
1 tl sitruunamehua

Koftat ovat kätevä valmistaa etukäteen ja viedä esimerkiksi rannalle tai piknikille, jossa ne voidaan kypsentää loppuun retkigrillillä. Jos käytät puisia grillivartaita, muista liottaa tikut kylmässä vedessä noin tunti ennen käyttöä, jotta ne eivät sytty grillatessa palamaan.
1. Kuori ja hienonna sipuli sekä valkosipulit pieniksi kuutioiksi. Sekoita sipulikuutiot, jauheliha, korppujauhot, mausteet ja hienonnettu korianteri keskenään. Massan tulisi olla yhtenäinen ja helppo muovata.
2. Jaa taikina öljytyin käsin kahdeksaan osaan ja muotoile ne varrastikkujen ympärille. Jos massa ei pysy kasassa, voit lisätä 1 tl kerrallaan korppujauhetta. Aseta valmiit vartaat kuljetusastiaan ja säilytä viileässä, kunnes olet valmis kypsentämään ne.
3. Kuori ja hienonna valkosipuli. Sekoita jogurttikastikkeen ainekset keskenään pieneen lasipurkkiin ja anna maustua viileässä, kunnes olet valmis tarjoilemaan.
4. Grillaa koftat kuumassa grillissä noin 10 minuuttia, kunnes ne ovat kypsiä. Kääntele niitä tasaisesti grillauksen aikana, jotta ne kypsyvät tasaisesti.
