1 valmis suolainen piirakkapohja
6 rkl suolatonta voita
2 oksaa tuoretta salviaa
½ pakettia pekonia
Hokkaido-täyte
1 Hokkaido-kurpitsa
1 keltasipuli
2 kananmunaa
1 tl merisuolaa
2 rkl hunajaa
2 dl vuohenjuustoa
kevät- tai ruohosipulia
Esilämmitä uuni 200 °C asteeseen. Ota piirakkapohja huoneenlämpöön vähintään tunti ennen käyttöä.
1. Kuumenna pannulla voita, kunnes se saa kullanruskean, hasselpähkinäisen värin. Varo polttamasta voita! Lisää pannulle viipaloitu pekoni sekä tuore salvia. Paahda pekoni rapeaksi, poista salvian oksat ja siivilöi salviaöljy erilliseen pieneen astiaan. Siirrä rapea pekoni kuivumaan talouspaperin päälle.
2. Kuori ja pilko Hokkaido-kurpitsa sekä sipuli. Keitä lohkoja kiehuvassa suolavedessä noin 15 minuuttia, kunnes kurpitsa on pehmeää veitsellä kokeiltuna. Soseuta sauvasekoittimella ja jäähdytä sose huoneenlämpöiseksi. Lisää kananmunat, suola, hunaja ja vuohenjuusto. Sekoita, kunnes massa on tasaista.
3. Levitä taikina leivinpaperilla vuorattuun piirakkavuokaan. Voitele taikinan reunat salviaöljyllä ja ripottele päälle rapea pekoni. Paista uunin keskitasolla noin 25–30 minuuttia, kunnes taikinan kuori on kullanruskea ja täyte hyytynyt.
4. Ota valmis Hokkaido-galette uunista ja sivele vielä kerran salviaöljyllä. Anna galetten jäähtyä vähintään 10 minuuttia ennen tarjoilua.
Koristele galette kevät- tai ruohosipulilla ja tarjoile raikkaan vuohenjuustosalaatin kanssa.
