1 kg pakaste tai tuoreita sinisimpukoita
2 pientä sipulia
2 valkosipulinkynttä
1 tl fenkolinsiemeniä
1 tl voita paistamiseen
tuoretta timjamia
1 laakerinlehti
1 punainen chili
1 dl kuohuviiniä
4 dl kuohukermaa
1/2 nippua tuoretta persiljaa
ripaus suolaa ja pippuria
1. Puhdista sinisimpukat huolellisesti ja poista rikkinäiset yksilöt. Jos käytät tuoreita simpukoita, varmista, että kaikki kuoret ovat tiukasti kiinni. Pakastesimpukat on suositeltavaa sulattaa kylmässä vedessä yön yli.
2. Kuori ja hienonna sipulit sekä valkosipulit. Murskaa fenkolinsiemenet joko veitsen lappeella tai mortellissa. Kuullota sipuleita ja fenkolia laakealla pannulla keskilämmöllä muutaman minuutin ajan, kunnes sipulit pehmenevät.
3. Lisää pannulle timjami, laakerinlehti, hienonnettu chili ja kuohuviini. Nosta lämpöä ja lisää pannulle puhdistetut simpukat. Peitä pannu kannella ja anna simpukoiden kypsyä höyryssä noin 5-10 minuuttia, riippuen simpukoiden koosta. Kun simpukat avautuvat, ne ovat valmiita.
4. Poista pannulta laakerinlehti, timjaminoksat ja avautumattomat simpukat. Sekoita simpukoiden joukkoon kerma, hienonnettu persilja, ripaus suolaa ja pippuria. Nosta paistos liedeltä ja sekoita tasaiseksi.
