MAUSTESEOS:
1 tl korianterin siemeniä
1 tl kuminan siemeniä
1 tl inkivääriä, mauste
suolaa ja pippuria
Esilämmitä uuni 180 °C asteeseen.
Valmista ankan rinta:1. Pyyhi ankanrinnat huolellisesti kuivaksi talouspaperilla ja poista mahdolliset nahkaan jääneet sulat. Tee rasvapuolelle ristiviillot noin sentin välein, varoen viiltämästä lihaa. Sekoita mausteet keskenään ja hiero seos tasaisesti fileiden molemmille puolille. Aseta molemmat rinnat rasvapuoli alaspäin kylmään paistinpannuun ilman lisärasvaa.
2. Kun pannu on lämmennyt ja rasva alkaa tiristä, vähennä lämpöä hieman, jotta rasva ei käry. Anna ankanrintojen paistua noin 5 minuuttia, kunnes rasvapuoli on rapea ja kauniin ruskistunut. Käännä fileet ja jatka paistamista toiselta puolelta, kunnes myös tämä puoli on saavuttanut tasaisen ruskistuksen.
3. Siirrä fileet uuniin loppukypsymään noin 5 minuutiksi. Tämä varmistaa, että paksu ankanfilee kypsyy keskeltä roseeksi, mutta säilyy mehukkaana. Ota ankat uunista, kun sisälämpötila on 53–55 °C.
4. Nosta fileet uunista ja kääri ne folioon. Anna niiden levätä noin 15 minuuttia, jotta lihasnesteet tasaantuvat ja liha pysyy mehukkaana.
