1. Leikkaa kesäkurpitsat pitkittäin kahtia ja poista lusikalla siemenet. Pilko kesäkurpitsat pieniksi kuutioiksi, kuori sipuli ja hienonna se.
2. Kuullota sipuli ja kesäkurpitsat kattilassa öljyssä. Lisää kattilaan kasvislientä niin, että kasvikset peittyvät juuri ja anna kiehua kypsiksi. Sekoita keitto tasaiseksi tehosekoittimella. Mausta suolalla ja tarkista maku.
3. Kaada keitto tarjoiluastioihin ja koristele kaurakerman raidoilla sekä lorauksella kuohuviiniä. Viimeistele tuoreella hienonnettua ruohosipulilla. Tarjoile keitto lämpimänä.
