4 isoa jauhoista perunaa
150 g ranskankermaa
2 dl cheddarjuustoa raastettuna
1 tl jauhettua juustokuminaa
200 g kypsiä kidneypapuja purkista
200 g kypsää maissia purkista
1 avokado
1 limetin mehu
2 tomaattia
½ vihreä paprika
1 ruukku korianteria
2 rkl öljyä
ripaus suolaa ja sokeria
muutama tippa tabascoa
Nyt valmistetaan tuplagrillattuja tacoperunoita, jotka sisältävät samoja herkullisia raaka-aineita kuin monissa texmex-ruoissa.
1. Pese perunat huolellisesti ja kuivaa ne talouspaperilla. Tee muutamia reikiä perunoiden kuoreen haarukalla. Aseta perunat folion päälle grilliin ja kypsennä niitä 175 asteen epäsuorassa lämmössä noin 1½ tuntia, kunnes ne ovat täysin kypsiä. Leikkaa perunat pituussuunnassa kahtia. Nosta grillin lämpötila 225 asteeseen.
2. Sekoita kulhossa ranskankerma, raastettu cheddarjuusto ja juustokumina. Levitä seos tasaisesti perunoiden päälle. Jatka perunoiden kypsentämistä noin 10–15 minuuttia, kunnes juustokuorrutus on kauniin kullanruskea.
3. Valuta ja huuhtele kidneypavut sekä maissit kylmällä vedellä lävikössä. Halkaise avokado, poista kivi ja kuutioi avokado kuoressaan. Lisää kuutiot kulhoon ja purista päälle tuoretta limettimehua. Huuhtele tomaatit ja kuutioi ne pieniksi. Halkaise paprika, poista siemenet ja valkoiset kalvot, ja leikkaa paprika pieniksi kuutioiksi. Hienonna tuore korianteri.
4. Sekoita kaikki täytteen ainekset kulhossa. Mausta seos ripauksella suolaa, hieman sokeria ja muutamalla tipalla tabascoa.
