TAIKINA
2 dl vehnajäuhoja
ripaus suolaa
1 kananmuna
2 rkl kermaviiliä
TÄYTE
100 g jauhelihaa
voita paistamiseen
2 valkosipulinkynttä
tuoretta salviaa
suolaa ja pippuria
ripaus jauhettua neilikkaa
1. Mittaa kulhoon vehnäjauhot ja suola. Levitä jauhoseos kulhon reunoille niin, että keskelle jää kuoppa. Riko kananmuna kuoppaan ja lisää kermaviili.
2. Sekoita ainekset käsin kiinteäksi taikinaksi ja vaivaa sitä huolellisesti. Kääri taikina elmukelmulla ja anna sen levätä jääkaapissa.
3. Kuori ja hienonna valkosipulit. Silppua salvia.
4. Kuumenna pannulla voi ja ruskista jauheliha valkosipulien, salvian ja mausteiden kanssa. Nosta pannu liedeltä ja anna jäähtyä huoneenlämpöiseksi.
5. Voitele jääpalamuotti ruokaöljyllä, jotta taikina ei tartu siihen. Jaa taikina kahtia tai neljään osaan ja kaulitse ohueksi levyksi, joka on jääpalamuottia suurempi.
6. Aseta ensimmäinen taikinalevy muottiin niin, että taikinaa jää reilusti muotin ulkopuolelle. Täytä muotti jauhelihatäytteellä ja peitä toisella taikinalevyllä.
7. Paina taikinalevyt sormin kiinni toisiinsa. Kääntele muotti leikkuulaudalle ja leikkaa taikinasta irrallisia taskuja. Käännä ylijäämätaikina taskun ympärille puolikuun muotoiseksi renkaaksi ja painele kiinni. Toista tarvittaessa ja valmista loputkin ainekset pelmeneiksi.
8. Keitä pelmenit kiehuvassa lihaliemessä noin 6–8 minuuttia. Vältä liian voimakasta kiehumista, sillä poreet voivat rikkoa taikinan.
Nosta pelmenit reikäkauhalla lautaselle ja tarjoile esimerkiksi venäläisittäin lihaliemen, smetanan ja hienonnetun persiljan kanssa.
