2 viipaletta pekonia
suppilovahveroita, kantarelleja tai herkkusieniä
1 keltasipuli
1 valkosipulia
½ kesäkurpitsa
voita paistamiseen
1 dl baby pinaattia
2 kananmunaa
2 rkl maitoa
2 rkl tuorejuustoa parmesaaniraastetta
suolaa ja pippuria
1. Esilämmitä uuni 200 asteeseen.
2. Leikkaa pekoni ohuiksi viipaleiksi ja paahda ne kuumalla valurautapannulla muutaman minuutin ajan, kunnes ne ovat rapeita. Lisää pannulle hienonnellut sienet, sipulikuutiot, murskattu valkosipulinkynsi, viipaloitu kesäkurpitsa ja nokare voita. Paista, kunnes sipulit ovat pehmeitä. Lisää lopuksi tuore pinaatti ja sekoita joukkoon.
3. Vatkaa kulhossa kananmunat, maito ja tuorejuusto tasaiseksi seokseksi. Kaada munamassa pannulle kasvisten päälle ja ripottele päälle runsaasti raastettua parmesaania.
4. Siirrä valurautapannu esilämmitettyyn uuniin ja paista noin 10 minuuttia uunin keskitasolla, kunnes kananmunat ovat hyytyneet ja parmesaani on saanut kauniin kullanruskean värin.
5. Mausta metsäsienifrittata suolalla ja pippurilla. Tarjoile esimerkiksi paistettujen perunoiden ja tuoreen persiljan kera.
