4 keltasipulia
5-8 valkosipulinkynttä
3 rkl voita
1½ l kasvislientä
½ tl timjamia
mustapippuria
2 rkl vehnäjauhoja
1 rkl vettä
3 rkl sitruunamehua
6 viipaletta paahtoleipää
130 g mustaleimajuustoraastetta
tuoretta ruohosipulia
1. Halkaise sipulit ja viipaloi ne ohuiksi. Hienonna valkosipulia haluamasi määrä.
2. Sulata voi tilavassa kattilassa. Kuullota sipulit pehmeiksi, mutta älä anna niiden ruskistua.
3. Lisää liemi ja mausteet kattilaan. Anna keiton kiehua hiljalleen kannen alla noin 30 minuuttia, sekoittaen välillä.
4. Sekoita vehnäjauhot kylmään veteen ja lisää seos keittoon vatkaten. Anna kypsyä muutama minuutti, ja lisää lopuksi sitruunamehu.
5. Asettele leipäviipaleet leivinpaperille vierekkäin. Leikkaa jokainen viipale 3 x 3 eli 9 osaan, mutta jätä viipaleet muodoltaan ehjiksi. Ripottele pinnalle juustoraaste ja gratinoi leipiä 225°C uunissa 3–5 minuuttia, kunnes juusto on sulanut ja saanut kauniin värin.
Jaa valmis keitto annoskulhoihin. Ripota pinnalle hienonnettua ruohosipulia ja aseta gratinoidut leivät keittoannosten päälle.
