Barbacoa-täyte
600 g naudan sisäpaistisuikaleita
4 valkosipulinkynttä
2 keltasipulia
4 chiliä
60 ml limemehua
2 rkl omenaviinietikkaa
3 laakerinlehteä
1 rkl jauhettua kuminansiementä
1 rkl kuivatettua oreganoa
1 tl mustapippuria
¼ tl neilikkaa
suolaa
4 dl lihalientä

vapaavalintaisia täytteitä, kuten raastettua juustoa, yrttejä, maustekastikkeita, guacamolea, kuutioitua tomaattia
Esilämmitä uuni 160°C.
1. Valmistele barbacoa-täyte: Mausta naudan sisäpaistisuikaleet suolalla. Paista liha syvässä uuninkestävässä padassa, kunnes siihen muodostuu kaunis paistopinta. Kuori ja paloittele sipulit ja chili. Lisää ne pannulle ja paista, kunnes kasvikset ovat hieman ruskistuneet.
2. Madalla lämpöä ja lisää pataan mausteet sekä omenaviinietikka, sekoittaen kevyesti. Mittaa lihaliemi lihojen päälle ja lisää vettä niin, että liha on juuri ja juuri peittynyt nesteeseen.
3. Peitä pata kannella ja hauduta uunissa noin 35 minuuttia, kunnes liha on ylikypsää ja mureaa. Tarkista maku ja keitä kasaan vielä noin 10 minuuttia ilman kantta. Jos haluat, lisää 1 tl nestemäistä savua tuomaan perinteiselle barbacoalle ominaista savuisuutta.
4. Tarjoile liha runsaiden lisukkeiden kanssa joko tortillan tai pitaleivän päällä.
