WONTON -TAIKINA
1 1/2 dl vehnäjauhoja + 1 tl suolaa
1 kananmuna
TÄYTE
1 iso herkkusieni
1 cm pala inkivääriä
1 kevätsipuli
1 tl soijakastiketta
2 tl seesamiöljyä
100 g sika-nautajauhelihaa
100 g katkarapuja
1 kananmunan valkuainen
1 tl perunajauhoja
**Valmistele taikina:** 1. Sekoita vehnäjauhoihin suola. Lisää joukkoon kananmuna ja 1 1/2 dl kylmää vettä. Aloita taikinan nyppiminen ja jatka vähintään 5 minuuttia, kunnes taikina on sitkeä ja täysin yhtenäinen.
2. Kääri taikina tuorekelmuun ja anna sen levätä vähintään 15 minuuttia jääkaapissa.
**Valmistele täyte sillä aikaa:** 1. Raasta herkkusieni ja inkivääri suoraan sekoituskulhoon. Hienonna joukkoon kevätsipulin vihreät varret. Mausta seos soijakastikkeella ja seesamiöljyllä.
2. Lisää joukkoon jauheliha, hienonnetut katkaravut, kananmunan valkuainen ja perunajauhot. Sekoita, kunnes massa on tasaista. Jaa täyte lusikalla noin 12 samankokoiseen palaan.
**Jatka taikinan käsittelyä:** 3. Jaa taikina kolmeen osaan. Jätä yksi osa työstettäväksi pöydälle ja laita loput takaisin jääkaappiin.
4. Kaulitse taikina jauhotetulla alustalla muutaman millin paksuiseksi levyksi. Leikkaa taikina noin 4 osaan.
5. Asettele täytettä taikinalevyjen keskelle ja painele raviolit kiinni. Nosta uusi pala taikinaa jääkaapista ja toista prosessi, kunnes kaikki täyte on käytetty.
**Höyrytä Siu Mait:** 6. Voitele höyrykattilan höyrytysosa öljyllä ja peitä leivinpaperista leikatulla ympyrällä.
7. Kuumenna kattilassa vettä ja höyrytä Siu Maita 8–10 minuuttia. Tarkista, että liha on kypsää, ja jatka höyryttämistä tarvittaessa vielä hetki.
