TERIYAKIMARINADI:

1 punainen chili
2 cm pala inkivääriä
400 g lohifileetä
1 tölkki ananasrenkaita tai tuoretta ananasta
2 rkl ruokokidesokeria
1. Esilämmitä uuni 175 asteeseen.
2. Valmistele teriyakimarinadi: - Sekoita keskenään teriyaki-kastike, soijakastike ja seesamiöljy. - Hienonna punainen chili ilman siemeniä ja lisää puolet siitä marinadiin. Säästä puolet koristeluun. - Raasta marinadiin tuore inkivääri ja kaada joukkoon ananassäilykkeen mehu. Sekoita huolella ja tarkista maku.
3. Tarkista, että lohifileeseen ei ole jäänyt ruotoja tai suomuja. Huuhtele filee ja kuivaa talouspaperilla. Siirrä lohi ilmatiiviiseen astiaan ja jätä marinoitumaan marinadin kanssa jääkaappiin noin 15 minuutiksi.
4. Lado uunivuokaan ananasrenkaat ja ripottele niiden pintaan ruokosokeri. Näin ananasrenkaat karamellisoituvat uunissa. Jos käytät tuoretta ananasta, poista ananaksen kova kuori ja kova ruoti keskeltä ennen viipalointia.
5. Nosta ananasviipaleiden päälle lohifileen ja viimeistele lopuilla marinadeilla.
6. Paista uunin keskitasolla noin 10-12 minuuttia, kunnes lohi on kypsää ja sen pinta alkaa hikoilla. Varo ylikypsentämästä lohta!
7. Anna fileen vetäytyä ananaspedill
ä vielä noin viisi minuuttia kypsennyksen jälkeen.
8. Viimeistele kypsä lohi tuoreella chilill
ä ja nypityllä timjamilla.
