SIMPUKKALIEMIPOHJA
1 kg simpukoita
2 kpl sipulia
2 kpl valkosipulinkynttä
25 g voita
3 dl kuivaa valkoviiniä
1 kpl laakerinlehtiä
2 rkl persiljaa
1 rkl timjamia
1 dl vettä
ripaus mustapippuria ja merisuolaa
KORISTELUUN
tuoretta persiljaa tai sitruunan lohkoja

1. Hienonna sipulit ja valkosipulit pieniksi kuutioiksi. Sulata voi tilavassa kattilassa ja kuullota siinä valkosipulit ja sipulit. Kun sipulit ovat läpikuultavia, lisää joukkoon viini ja laakerinlehti. Anna viini
n haihtua hieman, sitten lisää vesi ja mausteet. Mausta runsaasti tuoreesta pippurimyllystä ja hienolla merisuolalla. Anna kiehua hiljalleen.
2. Puhdista simpukat tarvittaessa ja poista avonaiset yksilöt. Lisää simpukat kiehuvaan liemeen ja peitä kattila tiiviillä kannella. Ravistele kattilaa ajoittain. Keitä simpukoita muutaman minuutin ajan, kunnes kuoret avautuvat.
3. Siirrä avautuneet simpukat kuorineen tarjoiluastiaan, mutta jatka liemen keittämistä. Keitä lientä ilman kantta kovalla lämmöllä, kunnes nestettä on haihtunut noin neljännes.
4. Kaada kuuma liemi simpukoiden päälle tarjoiluastiaan. Koristele persiljasilpulla tai sitruunan lohkoilla.
