2,5 dl huuhdeltua basmatiriisiä
½ sitruunan mehu + kuori
½ appelsiinin mehu
suolaa
Vihreä curry
1 sipuli
½ pieni kukkakaali
2 paprikaa
3 porkkanaa
1 rkl inkivääritahnaa
2 tl rypsiöljyä paistamiseen
2 rkl vihreää currytahnaa
2 tl soijakastiketta
2 tl riisiviinietikkaa
1 tölkki kookosmaitoa
tummaa sokeria
suolaa ja pippuria
½ punttia minttua ja korianteria
1. Kuori ja hienonna sipuli. Leikkaa muut kasvikset suupalan kokoisiksi paloiksi. Kuumenna kasvikset kuumennetulla öljyllä isossa paistinpannussa.
2. Lisää inkivääritahna ja curryjauhe kevyesti sekoittaen, kun kasvikset ovat saaneet hieman väriä. Kaada joukkoon soijakastike, riisiviinietikka ja kookosmaito. Anna hautua noin 15 minuuttia, kunnes kasvikset ovat kypsiä mutta säilyttävät rapeutensa. Mausta sokerilla, suolalla ja pippurilla.
3. Keitä huuhdeltu basmatiriisi pakkauksen ohjeiden mukaisesti. Mausta riisi suolalla, raastetulla sitruunankuorella sekä tuoreella sitruuna- ja appelsiinimehulla.
4. Hienonna tuoreet yrtit ja lisää ne currykastikkeeseen juuri ennen tarjoilua.
