5 keskikokoista bataattia
80 g kuutioitua voita
1 rosmariinin tai salvian oksa
ripaus suolaa
4 salottisipulia
3 dl kermaa
2 kananmunaa
80 g parmesaaniraastetta
1 sitruunan kuori ja mehu
1 pussi minivaahtokarkkeja
1. Esikuumenna uuni 180 asteeseen.
2. Halkaise bataatit pitkittäin ja aseta ne uunipellille. Tee bataattien kuoreen pieniä reikiä haarukalla tai juuresveitsellä ja paahda uunin ylätasolla noin 50 minuuttia. Kun bataatit ovat pehmeitä, ota pelti uunista ja anna jäähtyä hetki. Nosta uunin lämpötila 200 asteeseen.
3. Sillä aikaa kun bataatit paistuvat, sulata voi laakeassa kattilassa keskilämmöllä. Lisää pannulle yrtit. Kun voi alkaa kuplia ja ruskistua, ota pannu pois liedeltä ja anna jäähtyä. Poista yrtit pannulta, kun voi on jäähtynyt huoneenlämpöiseksi, sillä niiden maku on jo tarttunut voihin. Mausta suolalla ja kaada puolet yrttivoista erilliseen astiaan myöhempää käyttöä varten.
4. Kuori ja hienonna salottisipulit. Lisää sipulit pannulle lopun yrttivoin kanssa ja kuumenna varovasti. Sipulien ei tule ruskistua, joten kypsennä niitä kevyesti sekoitellen, kunnes ne pehmevät. Lisää pannulle kerma, kiehauta ja anna jäähtyä hetki.
5. Koveroi lusikalla jäähtyneiden bataattien sisus ja lisää ne sipuli-kermaseokseen kattilaan. Sekoita ja murskaa bataattimassaa lusikalla samalla, kun lisäät bataattia kattilaan. Kaada lopuksi joukkoon loppu yrttivoi, jotta seos muodostuu yhtenäiseksi. Käytä tarvittaessa sauvasekoitinta tai sähkövatkainta. Jatka sekoittamista, jotta massa jäähtyy nopeammin.
6. Sekoita joukkoon kananmunat, raastettu parmesaani sekä sitruunan raastettu kuori ja mehu. Kaada massa uunivuokaan, tasoita pinta ja kypsennä uunin keskitasolla 15 minuuttia. Suolaa pinta.
7. Aseta bataattivuoan pinnalle vaahtokarkkeja ja paista vielä 15 minuuttia uunissa.
Anna jäähtyä huoneenlämmössä 10 minuuttia ennen tarjoilua. Tarjoile esimerkiksi kalkkunarullan tai tuoreen salaatin kanssa.
