1 kokonainen, perattu siika
2 kevätsipulia tarjoiluun

CHARMOULA-KASTIKE
1 sitruunan kuori ja mehu
1 nippu lehtipersiljaa
1 nippu korianteria
½ dl oliiviöljyä
½ rkl juustokuminaa
1. Valmistele marinadi: Kuori sitruunan kuori ja lisää se tehosekoittimeen. Purista sitruunasta mehu ja lisää se sekoittimeen. Mittaa muut aineet sekoittimeen ja blendaa tasaisesti. Lisää öljyä tarvittaessa, jotta yrttien rakenne hajoaa hyvin sekoitettaessa.
2. Valmistele siika: Tarkista, että siian silmät ovat kirkkaat ja liha kimmoisaa. Kidusten tulisi olla punaiset ja kalan tuoksun merellinen. Tarkista, onko kalan iholle jäänyt suomuja ja poista ne tarvittaessa. Leikkaa evät, kidukset ja pyrstö saksilla. Huuhtele kala huolellisesti ja varmista, että sen sisältä on poistettu kaikki sisäelimet. Suolaa kala sekä sisältä että ulkoa.
3. Hiero puolet charmoula-kastikkeesta kalan pinta-alalle ja anna sen maustua jääkaapissa vähintään tunti. Kun kala on marinoitunut, aloita grillin lämmittäminen.
4. Aseta kala grillihalsteriin ja grillaa kuumalla liekillä noin neljä minuuttia per puoli, kalan koosta riippuen. Kalan pinnan tulisi hiillostua, mutta ei palaa. Tarkista kalan vatsan kohdalta, että liha on kypsää.
5. Viimeistele kypsä siika lopulla charmoula-kastikkeella ja tuoreella sitruunamehulla. Tarjoile hienonnetun kevätsipulin ja esimerkiksi voissa paistettujen uusien perunoiden kanssa.
