Pitaleipää
(valmis tai itsetehtyä)
2 1/2 dl vettä
25 g hiivaa
1 tl suolaa
2 rkl öljyä
5 dl durumvehnäjauhoja
Hummusmassa
2 valkosipulinkynttä
1 purkki kypsiä kikherneitä
3 rkl tahinia
1 dl oliiviöljyä
1 dl vettä
1 sitruuna
suolaa & juustokuminaa
Punajuurihummus
2 pientä punajuurta
**Pitaleipä-ohje (8 kpl):** 1. Liuota hiiva kädenlämpöiseen veteen. Lisää suola, öljy ja jauhot, ja alusta taikina hyvin. Anna taikinan kohota kaksinkertaiseksi. Jaa kohonnut taikina kahdeksaan osaan ja muotoile
pulliksi.
2. Kauli pullat mataliksi, pyöreiksi pitaleiviksi (halkaisija noin 15 cm). Anna leipien kohota leivinliinalla peitettynä lämpimässä paikassa noin 30 minuuttia. Paista 225 °C -asteisessa uunissa noin 12 minuuttia. Onnistuneet pitaleivät kohoavat korkeiksi kupliksi.
**Valmistele punajuuret punajuurihummukseen:** 3. Leikkaa punajuuret kahteen osaan ja aseta ne leikkuupinta ylöspäin uunipellille. Paahda uunissa kuorineen. Tarkista kypsyys terävällä veitsellä 20 minuutin jälkeen. Jos punajuuret ovat vielä napakoita, jatka paahtamista. Jäähdytä, kuori ja lohko kypsät juuret. Siirrä odottamaan.
**Valmistele hummusmassa:** 4. Paista kuoritut valkosipu
lit pannulla, kunnes ne pehmenevät. Valuta kikherneet ja soseuta ne valkosipulien, oliiviöljyn, veden ja sitruunamehun kanssa sauvasekoittimella. Mausta tahinilla, suolalla ja juustokuminalla. Tarkista maku ja koostumus. Lisää tarvittaessa öljyä tai vettä, jotta massasta tulee sileä. Siirrä puolet valmiista hummusmassasta tarjoiluastiaan ja peitä oliiviöljyllä.
**Viimeist
ele punajuurihummus:** 5. Lisää paahdetut punajuuret jäljelle jääneeseen hummusmassaan ja soseuta. Maista ja lisää tarvittaessa suolaa, juustokuminaa ja sitruunamehua.
