TAIKINA
1 dl vehnäjauhoja
1 rkl tattarijauhoja
ripaus suolaa
2 tl oliiviöljyä
2 rkl vettä
TÄYTTEET
2 rkl parmesaanituorejuustoa
50 g parmesaanilastuja
1 tuore tai säilyke persikka
ripaus savupaprikajauhetta
1/2 punasipuli
tuoretta rosmariinia
1. Esilämmitä uuni 250°C asteeseen ja vuoraa uunipelti leivinpaperilla.
2. Siivilöi isoon kulhoon vehnäjauhot, tattarijauhot ja suola. Lisää joukkoon käsin sekoittaen oliiviöljy ja vesi ohuena nauhana. Taikinan tulisi olla rouheinen, mutta silti yhtenäinen.
3. Kaada taikina jauhotetulle alustalle ja vaivaa sitä muutama minuutti, kunnes se on kimmoisaa. Jätä taikina tekeytymään alustalle, kun valmista täytettä.
4. Hienonna tai suikaloi täytettä varten persikka ja punasipuli. Kaulitse tai venytä kimmoisa taikina mahdollisimman suureksi pohjaksi ilman, että se repeää.
5. Levitä taikinalevylle parmesaanituorejuusto, ripottele päälle parmesaanilastuja ja persikkasuikaleita. Mausta flammkuchen savupaprikalla ja koristele punasipulilla sekä rosmariinin oksalla.
6. Paista uunin keskitasolla noin 10-15 minuuttia taikinan paksuudesta riippuen. Tarkista, että pohja on kypsä ennen kuin otat flammkuchenin uunista. Nauti!
