1 keltasipuli + valkosipulinkynsi
1 punainen chili
200 g kesäkurpitsaa
3 dl vettä
2 rkl sambal oelek-chilikastiketta
2 rkl currytahnaa
1 tl cajunpippuria
ripaus suolaa ja mustapippuria
2 porkkanaa
2 perunaa
200 g halloumia
2 dl kookoskermaa
muutama oksa korianteria hienoksi leikattuna
+ erilaisia siemeniä ja pähkinöitä tarjoiluun
Mausteinen intialainen Mughlai-kasvisruoka halloumin kera!
1. Kuori ja hienonna sipulit. Halkaise chili ja poista siemenet. Hienonna chili ja kuutioi kesäkurpitsa. Kuullota sipulit, chili ja kesäkurpitsat kuumalla pannulla, kunnes kasvikset ovat pehmeitä. Lisää joukkoon vesi, sambal oelek, currytahna ja kuivamausteet. Anna hautua hiljalleen kannen alla noin 20 minuuttia.
2. Kun kesäkurpitsa on niin pehmeä, että sen rakenne alkaa hajota, lisää joukkoon kuoritut ja kuutioidut porkkanat ja perunat. Anna kiehua hiljalleen kannen alla vielä noin 15 minuuttia, kunnes juurekset ovat kypsiä. Lisää kastikkeeseen kookoskerma ja kiehauta, jotta seos muuttuu yhtenäiseksi. Nosta liedeltä.
3. Paahda samaan aikaan kuutioidut halloumit kuumalla pannulla kaikin puolin.
Kun kuutiot ovat saaneet kauniin kultaisen värin, lisää ne kastikkeen joukkoon ja sekoita varovasti.
Koristele ruoka tuoreella korianterilla ja tarjoa keitetyn riisin sekä erilaisten siementen ja pähkinöiden kanssa.
