noin 1 kg kesäkurpitsaa
½ pnt basilikaa
½ pnt meiramia
½ pnt persiljaa
ripaus suolaa ja pippuria
500 g ricotta-juustoa
100 g juustoraastetta
Kesäkurpitsarullat ricottatäytteellä – herkullinen ja kevyt kesäherkku!
1. Esilämmitä uuni 180 asteeseen. Pese kesäkurpitsat huolellisesti ja leikkaa niistä pitkittäissuunnassa ohuita viipaleita. Käytä apunasi joko mandoliinia tai juustohöylää saadaksesi tasapaksut siivut.
2. Valmista täyte sekoittamalla ricotta-juusto kulhoon. Lisää joukkoon hienonnettuja tuoreita yrttejä, suolaa ja mustapippuria maun mukaan. Sekoita tasaiseksi.
3. Ota ruokalusikallinen ricottatäytettä ja levitä se tasaisesti kesäkurpitsaviipaleen päälle. Kääri viipale huolellisesti rullalle ja asettele rullat tiiviisti uunivuokaan. Toista sama kaikkien kesäkurpitsaviipaleiden kanssa.
4. Ripottele rullien päälle runsaasti raastettua juustoa, kuten esimerkiksi mozzarellaa tai parmesaania.
5. Paista uunissa noin 30 minuuttia, kunnes juusto on saanut kauniin kullan
ruskean värin ja kesäkurpitsat ovat pehmenneet.
