800 g naudan paistia
2 rkl voita
suolaa ja mustapippuria
5 dl lihalientä
5 timjamin oksaa
1 iso sipuli
2 porkkanaa
3 varsisellerin vartta
3-4 valkosipulinkynttä
5 dl punaviiniä
5 laakerinlehteä
1 rkl sokeria
Peruna-sellerisose:
600 g jauhoista perunaa
200 g juuriselleriä
2 kananmunan keltuaista
1 dl tuoretta lehtipersiljaa hienonnettuna
Leikkaa paisti n. 3 x 3 cm kuutioiksi. Ruskista voin kanssa padassa tai korkeareunaisessa paistinpannussa. Mausta suolalla ja pippurilla. Lisää lihaliemi ja timjamin oksat.
Kuori ja leikkaa sipuli, porkkanat, varsiselleri ja valkosipulit pieniksi paloiksi. Lisää kasvikset pataan.
Lisää punaviini, laakerinlehdet ja sokeri. Hauduta liedellä miedolla lämmöllä tai uunissa 150 asteessa, kunnes liha ja kasvikset ovat kypsät ja liemi sakenee.Kypsennysaika on lihan mureudesta riippuen n. 2 – 3 t.
Valmista peruna-sellerisose: Kuori perunat ja selleri. Kuutioi. Keitä vähässä suolalla maustetussa vedessä kypsiksi. Kaada vesi pois. Soseuta perunasurvimella.Lisää voi, keltuaiset ja hienonnettu persilja. Sekoita.
Kaada lihapata voideltuun uunivuokaan. Nostele peruna-sellerisose lihapadan päälle. Kuvioi pinta lusikan pesällä.
Paista uunissa 200 asteessa n. 20 min, kunnes pinta on kauniin ruskea.
