COUSCOUS-MAISSIMUNAKAS:
2 dl maissia
½ dl kypsää couscousta
2 rkl öljyä
1 tl kuminaa tai jeeraa
1 tl kurkumaa
2 kananmunaa
1 rkl vettä
suolaa ja mustapippuria
100 g halloumia
1 punasipuli
kourallinen kirsikkatomaatteja
tuoretta persiljaa
1. Kuumenna isolla pannulla öljyä ja paista maissia sekä couscousta. Mausta kevyesti kuminalla ja kurkumalla, sekoittaen tasaisesti.
2. Riko kananmunat pieneen kulhoon ja sekoita ne kevyesti haarukalla. Lisää joukkoon vähän vettä ja kaada seos maissien ja couscousin päälle. Anna munakkaan hyytyä rauhassa.
3. Käännä munakas varovasti yli puoliksi, jotta siitä muodostuu puolikuun muotoinen. Mausta suolalla ja tuoreella mustapippurilla.
4. Lisää pannulle hallouminsiivuja sekä ohuesti suikaloitua punasipulia. Tarvittaessa lisää öljyä ja paista halloumi, kunnes siitä tulee kauniin kullanruskeaa.
5. Asettele munakkaan päälle halloumi, sipulit, puolitetut kirsikkatomaatit ja runsaasti tuoretta persiljaa.
