Omenafocaccia on herkullinen ja erikoinen leipä, joka sopii monenlaiseen tarjoiluun. Tässä yksityiskohtainen ohje sen valmistukseen:
1. Esilämmitä uuni 200 asteeseen. Jos haluat leivästä erityisen rapean, voit asettaa uunin alatasolle saviastiallisen vettä, joka lisää kosteutta ja auttaa kuoren rapeutumisessa.
2. Valmistele focacciataikina: Lämmitä vettä kevyesti kattilassa, kunnes se on noin 40 asteista. Sekoita lämmitettyyn veteen hiiva, pizzamauste ja suola. Lisää vähitellen vehnäjauhoja ja kaurahiutaleita, ja vaivaa taikinaa 5–10 minuuttia yleiskoneella, jotta taikina saa hyvän sitkon. Jos sinulla ei ole yleiskonetta, voit vaivata taikinaa käsin. Lisää öljyä tarpeen mukaan. Anna taikinan kohota kaksinkertaiseksi liinan alla lämpimässä paikassa.
3. Voitele uunipelti runsaasti öljyllä ja kaada taikina pellille. Levitä taikina tasaisesti, jotta saat uunipellin kokoisen levyn. Anna leivän kohota vielä pellillä liinan alla. Asettele taikinan pinnalle omenaviipaleita ja halutessasi merisuolaa tai muita mausteita. Paista leipää uunin keskitasolla noin 20 minuuttia, kunnes taikina on kypsää ja kuori on rapea.
4. Sivele valmiin omenafocaccian pinta oliiviöljyllä. Tarjoile leipä joko sellaisenaan tapenadin ja täytteiden kanssa tai täydellisenä lisukkeena salaatille.
