1 dl karkeita tapiokajauhoja
ripaus suolaa ja pippuria
2 isoa tomaattia
muutama kirsikkatomaatti
125 g mozzarellaa
1 rkl vihreää pestoa
1 tl oliiviöljyä
tuoretta basilikaa
1. Aloita tapiokatortillan valmistus kuumentamalla puhdas paistinpannu keskilämmöllä.
2. Sirota tapiokajauhot kuivalle pannulle ohueksi ja tasaisesti levittyväksi kerrokseksi. Anna jauhojen tekeytyä muutama minuutti sekoittamatta, jotta ne nivoutuvat yhteen ja muodostavat kiinteän pohjan. Kun tortilla tuntuu kiinteältä ja pysyy kasassa, mausta se suolalla ja pippurilla, ja käännä lastalla varovasti.
3. Madalla pannun lämpöä ja anna tortillan paistua vielä hetki toisella puolella. Liu’uta valmis tortilla suoraan lautaselle odottamaan. Jos haluat isomman annoksen, paista toinen tortilla samalla tavalla ja puhdista pannu välillä talouspaperilla.
4. Viipaloi pestyt tomaatit ja mozzarella. Levitä vihreä pesto lämpimälle tapiokatortillalle ja asettele viipaloidut täytteet toispuoleisesti letun päälle.
5. Mausta täytetyt tortillat laadukkaalla oliiviöljyllä, ripottele päälle tuoreita basilikanlehtiä ja mausta pippurilla. Taita tortilla kahtia ja painele kevyesti kiinni.
