2 dl tattarijyviä + kasvisliemikuutio
170 g liotettuja kikherneitä
1/2 sitruunan mehu
1 dl vettä
1 tl tahinia
1 keltasipuli ja valkosipulinkynsi
1/2 nippua persiljaa
1/2 nippua korianteria
2 kananmunaa
2 rkl maissitärkkelystä
ripaus suolaa ja mustapippuria
ripaus kanelia tai jauhettua fenkolia
3 rkl öljyä paistamiseen
1. Huuhtele tattarijyvät huolellisesti ja kypsennä ne kasvisliemessä pakkauksen ohjeiden mukaisesti. Siivilöi jyvät ja valuta ne hyvin.
2. Valuta ja huuhtele kikherneet perusteellisesti juoksevan veden alla. Aseta kikherneet kulhoon, purista joukkoon puolen sitruunan mehu ja lisää vesi sekä tahini. Soseuta massasta tasainen tahna sauvasekoittimella. Jos massa on liian tiukka, lisää vettä ruokalusikallinen kerrallaan, kunnes sekoitin pystyy muuttamaan sen sileäksi tahnaksi.
3. Kuori ja hienonna sipulit. Hienonna tuoreet yrtit. Sekoita keskenään tattarijyvät, kikhernetahna, sipulikuutiot, yrtit, kananmunat, maissitärkkelys ja mausteet. Käytä puuhaarukkaa tai kostutettuja käsiä sekoittaaksesi taikinan tasalaatuiseksi. Anna taikinan levätä jääkaapissa noin 15 minuuttia.
4. Muotoile taikinasta samankokoisia paloja, pyörittele ne käsissäsi ja litistä ne sitten pihveiksi. Jos taikina tarttuu käsiin, kostuta kädet vedellä tai käytä hieman öljyä. Kuullota falafelpihvit pannulla runsaassa öljyssä noin 3 minuuttia per puoli, kunnes pinta on kauniin kultainen ja pihvit pysyvät kasassa.
Tarjoile tattari-falafelpihvit perinteiseen tapaan maustetun riisin ja raikkaan jogurttikastikkeen kanssa.
