Täyte:
100 g purjoa
tilkka oliiviöljyä
3 pussia pakastepinaattia
500 g ricottajuustoa
1 ½ dl parmesaanijuustoraastetta
½ dl silputtua tuoretta persiljaa
1 rkl silputtua tuoretta meiramia
2 tl suolaa
ripaus mustapippuria
6 munaa
voiteluun yksi muna josta rakenne rikottu kevyesti
koristeluun seesaminsiemeniä
1. Lämmitä uuni 200 asteeseen. Aseta filotaikinalevyt limittäin voideltuun irtopohjavuokaan. Jätä taikinan reunat roikkumaan vuoan reunojen yli. Pidä pohjan filotaikinat kosteina hieman kostutetun pyyhkeen alla.
2. Hienonna halkaistu ja huuhdeltu purjo. Kuumenna pannulla loraus öljyä ja paista purjot pehmeiksi. Jos käytät pakastepinaattia, purista liika neste pois ennen kuin lisäät sen pannulle. Kääntele seosta lastalla ja siirrä purjo-pinaattiseos kulhoon. Anna jäähtyä.
3. Sekoita seokseen juustot, mausteet, yrtit sekä kaksi munaa. Kaada täyte pohjataikinan päälle vuokaan. Tee täytteeseen neljä syvennystä ja riko niihin munat. Nosta reunojen yli roikkuvat taikinalevyt täytteen päälle. Voitele pinta munalla ja ripottele päälle esimerkiksi seesaminsiemeniä.
4. Aseta uunin pohjalle pelti, jossa on leivinpaperi, jotta neste ei tipu uunin pohjalle. Paista uunin keskiosassa noin tunti.
5. Peitä pinta foliolla, kun se on saanut tarpeeksi väriä. Anna piirakan jäähtyä vuoassa. Tarjoile piiras haaleana.
