2 kesäkurpitsaa
suolaa ja pippuria
1 rasia kirsikkatomaatteja
Tuorepesto
2 valkosipulinkynttä
60 g pinjansiemeniä
30 g parmesaania
1 puntti basilikaa
0,5 dl oliiviöljyä
1. Valmistele pesto: Mittaa pinjansiemenet ja osa basilikanlehdistä mortteliin. Hienonna ne tahnaksi ja lisää basilikaa vähitellen, kunnes aiemmat lehdet ovat hienontuneet – säästä muutama lehti viimeistelyä varten. Lisää joukkoon raastettu parmesaani ja valkosipulikynnet. Viimeistele pesto sekoittamalla joukkoon oliiviöljyä, kunnes koostumus on pehmeä. Mausta suolalla.
2. Höylää kesäkurpitsasta pitkiä, nuudelimaisia soiroja mandoliinilla tai juustohöylällä. Älä käytä kesäkurpitsan sisintä osaa, koska se hajoaa helposti pannulla.
3. Kuumenna noin puolet pestosta lämpimällä pannulla ja lisää kesäkurpitsasoirot. Kääntele ne pestossa varovasti. Lisää lopuksi jäljellä oleva pesto ja koristele tuoreella basilikalla. Puolita kirsikkatomaatit ja tarjoile ne kesäkurpitsanuudelien kanssa.
