Pohja:
250 g pehmeää voita
250 g soseutettua kypsää perunaa
4 dl vehnäjauhoja
suolaa
ripaus kurkumaa
Täyte:
1 rkl rypsiöljyä
400 g kalkkunanjauhelihaa
2 valkosipulinkynttä
2 tl jeeraa eli juustokuminaa
1 tl neilikkaa
suolaa
1 rkl tomaattipyreetä
1 tl sinappia
1 dl kuivattuja aprikooseja hienonnettuna
1 dl hienonnettuja cashewpähkinöitä
1 rkl hienonnettua tuoretta minttua
1 rkl hienonnettua tuoretta basilikaa
1 kananmuna
Kalkkunamuffinit tarjoavat herkullisen itämaisen makuelämyksen.
1. Aloita valmistamalla pohja. Sekoita huoneenlämpöiseen rasvaan soseutettu peruna, jauhot ja kurkuma. Älä vaivaa taikinaa liikaa. Jaa taikina voideltuihin muffinivuokiin, jättäen tilaa kalkkunatäytteelle.
2. Kuori ja hienonna valkosipulit. Hienonna myös tuoreet yrtit, kuivatut aprikoosit sekä pähkinät.
3. Ruskista kalkkunanjauhelihaa öljyssä, lisää loppuvaiheessa valkosipulit ja kuivamausteet. Lisää tomaattipyree, sinappi, hienonnellut aprikoosit ja pähkinät. Hauduta kannen alla miedolla lämmöllä noin 5 minuuttia. Anna täytteen jäähtyä.
4. Sekoita jäähtyneeseen kalkkunatäytteeseen hienonnellut yrtit ja kananmuna. Jaa täyte muffinivuokiin taikinan päälle.
5. Paista uunissa 200 asteessa keskitasolla noin 20 minuuttia, kunnes muffinit ovat kypsiä ja pintaa on hieman kullanruskea.
