7 ½ dl vettä
1 ½ kasvisliemikuutiota
200 g sipulia
pala sellerin vartta
3 rkl voita
3,5 dl risottoriisiä
2 tl kurkumaa
1 ½ dl kuivaa valkoviiniä
2 sitruunan mehut ja kuoret
1 ½ dl parmesaaniraastetta
2 dl kermaa
basilikaa
Raikas risotto yllättää yksinkertaisuudellaan! Voit lisätä annoksen päälle esimerkiksi katkarapuja, lohta tai nauttia sen sellaisenaan.
1. Valmista kasvisliemi sekoittamalla vesi ja liemikuutiot kattilassa. Lämmitä liemi ja pidä sitä kuumana risoton valmistuksen ajan.
2. Hienonna sipuli ja halkaistut varsisellerit. Lisää ne paistokasariin voin kanssa. Paistele hetki, kunnes lisäät riisin ja kurkuman joukkoon. Kuullota pari minuuttia, kunnes riisi alkaa olla lähes läpikuultavaa.
3. Lisää loraus valkoviiniä ja odota, että se imeytyy. Lisää sitten kuumaa kasvislientä kauhallinen kerrallaan. Sekoita, kunnes neste on imeytynyt riisiin. Anna nesteen imeytyä riisiin aina ennen uutta nestelisäystä. Muista sekoitella jatkuvasti.
4. Viimeistele annos halutessasi ruokakermalla, mutta ilman kermaakin risotto onnistuu. Mausta sitruunakuoriraasteella, sitruunamehulla ja juustoraasteella. Sekoita hyvin.
Valmiin risoton kuuluu olla kosteaa, ja riiseissä tulee olla vielä purutuntumaa! Koristele haluamallasi yrtillä, sitruunan kuorella ja parmesaanilla.
